Oysters
Available all year round, they start their journey in a hatchery. When they reach the size of a thumbnail, they are transferred to beds in the sea.
These then grow in fine mesh bags on intertidal trestles, relying solely on the natural resources of the cool, pure waters for nourishment. It can take up to four years for them to reach maturity.
After a 42-hour purification period, the oysters are packed into chilled boxes and can be supplied with storage and opening instructions upon request.
Oysters can be enjoyed raw, served on the half shell with a squeeze of lemon juice and black pepper or a dash of Tabasco. They can also be cooked, either in or out of their shell.
Lindisfarne Oysters can be eaten raw, served on the half shell with a little lemon juice and black pepper or a dash of Tobasco. They can also be cooked, either in or out of their shell.
